Old Cucumber, Pork & Peanut Soup Easy Recipe

Ingredients:
1/2 kilo pork shoulder or belly
1 medium sized old cucumber
1/4 cup peanut
3 tbsp fish sauce

VERDICT
WILL: I am always a huge fan of hot soups in Singapore. Since Singapore is a melting pot there are many varieties to choose from. Old cucumber soup is one of my favourite. 

When looking how to cook that meal, I am astonished for the ingredients. The dried squid and anchovies is quite pricey here in SG so for this stewed meal be on budget, we improvised. Instead of dried seafood we put on the umami taste of fish sauce. If there’s no old cucumber can be found (which we found that day) we can use carrot. And we can skip the dates too. 

What is the taste? I will always crave for this kind soup! It has a feast of flavours! Saltiness from fish sauce, sweetness from the old cucumber and dates, and the crunchy side brought by the peanuts! Take a spike of soy sauce with grated ginger or smashed chili! Oh my!!

Simple Pan-Fried Meat & Tofu Burger - Budget & Healthy Recipe

Ingredients:
250g minced pork
1 large firm tofu
1 medium carrot (minced)
3 stalks green onion (chopped)
3 cloves garlic (minced)
3 eggs
All purpose flour
Salt and pepper
Sesame oil

Remove excess water from the tofu by squeezing it.
In a bowl, combine the pork, tofu, carrots, garlic, green onions and an egg. Mix them well and add salt and pepper to taste. Put a dash of sesame oil.
Mold into patties and cover them in flour.
Beat the two remaining eggs and dip the patties before frying them in low heat. We want to maintain the yellow color. Serve.






VERDICT
WILL: In this kind of situation, we need to think how to save as much as we can without the affecting the flavour of the food.

In this recipe, Abbey used tofu as extender to the patty. Well, what can we say? Tofu really does the magic. 

Dip it in to a ketchup and chili sauce, who wil say that almost 3/4 of the patty is made of tofu and not pork meat? Hehe.

Mushroom and Soy Sauce Pasta Recipe

1 bag shiitake mushrooms
3 tablespoons soy sauce
3 tablespoons butter
5 tablespoons olive oil
1 garlic finely chopped
pepper to taste
parsley leaves  

Cook the pasta al dente. 

In a large pan over high heat, add oil, 1 tbsp butter and finely chopped garlic. Add mushrooms and cook until water evaporates. Drain pasta and add to the pan of cooked mushrooms.

Turn the heat to high. Mix well and add soy sauce and olive as desired. Toss in the parsley before serving.  

Serve with fresh parmesan cheese

VERDICT
ABBEY: This is another variation of Wilma’s pasta. It looks simple which it is but the flavor and taste is superb. 

The mushrooms are moist as they absorb the soy sauce. Good to have many alternative flavors for our pasta dinner.
